Greek Tomato Salad

Ingredients:

2 Pita Breads
1 Lemon
¼ cup olive oil
¼ tsp cracked pepper
2 pints grape or cherry tomatoes – halved
½ cup thinly sliced red onion
½ cup pitted kalamata olives
½ cup chopped fresh dill
½ cup chopped fresh mint
4 oz feta chesse – crumbled
Lemon slices-optional
Fresh dill – optional

Add one 6 oz can of tuna, drained and flaked, and you will have a quick and main dish salad

Directions:

Preheat oven to 350 degrees- Cut each pita bread into 8 wedges-spread on baking sheet – Bake until lightly browned, 8-10 minutes – Meanwhile, over large bowl, grate ¼ tsp. zest and squeeze 2 tbs. juice from lemon – Whisk in oil, salt and pepper.  Add tomatoes, onion, olives, dill, mint and toasted pita – Mix well – Gently toss in feta- Garnish with lemon slices and dill sprigs if desired
